EASY Peach Cobbler
August means peaches! I just can’t get enough of them - the smell, the color, the sweetness. Growing up, my grandpa had peach trees in his backyard. Come harvest time, my grandma would make peach pie which (bless her heart), she thought we LOVED. What we really loved was the ice cream that came with it. And the crust. The peaches? I prefer to each peaches in their natural, juicy state; however, that all changed last year when I stumbled upon a sinfully simple peach cobbler recipe. It’s buttery and sweet and tastes like summer. Serve it straight from oven with LOTS of vanilla ice cream.
Our local fruit farm offered Pick Your Own Peaches for the first time in forever! I knew we had to get to the orchard and enjoy the harvest for ourselves. The fragrance was heavenly and we couldn’t get over how large the peaches were! The was our most successful “Pick Your Own” experience of the summer in that my toddler finally participated!! Strawberries - nah, blueberries - no way; but peaches? He caught on quickly and I loved seeing him proudly yank those peaches from the tree and lug around our heavy basket.
When we got home, I knew peach cobbler would be first of the list of things to make with our bounty. I have more peaches than I know what to do with! I’m freezing the rest and may attempt peach preserves because I just can’t help myself…
This peach cobbler recipe comes together in no time at all. Aside from the peaches, I bet you already have all the ingredients in your fridge & pantry. One stick of butter (I know..) melts in the baking pan while the oven preheats. A quick boil to soften the peaches, followed by a simple batter that I mix with a wooden spoon. Throw this in the oven while you have dinner and enjoy the summer dessert of your dreams!
Ingredients
Peach Filling:
4 cups fresh peaches, sliced (you can leave the skin or peel it first)
2 Tbsp sugar (if your peaches are super ripe, you can skip the sugar!)
1 Tbsp lemon juice
Batter:
1 cup milk
1 cup flour
1 cup sugar
1 tsp baking powder
1 tsp vanilla extract
pinch of salt
Instructions
Bring peaches and lemon juice to a boil until softened, set aside.
Preheat oven to 375 with one stick of butter your baking pan of choice
Mix batter ingredients
Once the oven is preheated the butter is fully melted, pour batter directly into the pan, followed by the peaches.
Bake 40-45 minutes.
Serve warm with lots of vanilla ice cream!
